Garlic Ginger Prawns

Shaoxing wine (Chinese cooking wine) adds a slight sweetness to the prawns and the ginger brightens the flavours.


Serves: 4 

  • 300g prawns
  • salt and pepper to taste
  • 1 1/2 tablespoons Shaoxing wine
  • oil for cooking
  • 3 cm ginger, minced
  • 2 garlic cloves, minced
  • 1 teaspoon oyster sauce
  • 1 teaspoon soy sauce
  • 2 teaspoons tomato sauce
  • 1 teaspoon chilli sauce
  • 1 egg white, beaten

  1. Devein the prawns but leave the shells on. Marinate the prawns with some salt, pepper and Shaoxing wine for about 15 minutes.
  2. Heat a little oil in pan and stir-fry ginger and garlic until fragrant. Add the oyster sauce, soy sauce, tomato sauce and chilli sauce and stir well.
  3. Drain the prawns of the marinade. Add to the pan and mix well with the sauce. Then add the egg whites and stir-fry quickly until prawns are cooked. Serve.
