Spicy Carrot and Potato Soup

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 clove crushed garlic
    • 1 onion, chopped
    • 1 tablespoon fresh coriander, chopped
    • 1 teaspoon chilli powder
    • 3 carrots, chopped
    • 1 potato, diced
    • 4 cups (1 litre) vegetable stock

    1. In a large pot heat olive oil over medium heat.
    2. Add garlic, onion, coriander and chilli and cook gently until onion is soft.
    3. Add carrots and potato and cook 5 minutes.
    4. Pour in vegetable stock and simmer for 45 minutes. Add salt and pepper to taste.
    5. Blend until smooth with a hand blender and serve in small bowls.
