Spiced Coconut Coffee

    This is a warm beverage from West Java called bajigur. It is usually served at night or during cold weather.

    Serves: 2 

    • 3cm fresh ginger, sliced thinly
    • 1/2 teaspoon grated fresh nutmeg
    • 1 stick cinnamon
    • 2 cloves
    • 3cm lemongrass (white part), minced
    • 3 cups water
    • 4 tablespoons instant coffee
    • 1 cup coconut milk
    • 2 tablespoons palm sugar
    • 1/2 teaspoon salt
    • 4 tablespoons fresh coconut

    1. Heat the ginger, nutmeg, cinnamon, cloves and lemongrass in 3 cups water. Simmer lightly for 10 minutes.
    2. Turn off the heat, add the instant coffee and allow to steep for a few minutes.
    3. Strain the solids from this liquid and add the coconut milk, palm sugar and salt. Simmer gently for 2 minutes.
    4. Add the fresh coconut before serving.


    If you want to be authentic, add 4 tablespoons shredded buah kolang-kaling or buah atep (fruit from Arenga pinnata palm) with the coconut before serving.
