Basic Moist Banana Cake

    This is a very basic banana cake which allows the bright flavour of ripe bananas to come through. Ice it if you wish.

    Makes: 1 cake

    • 150g butter
    • 150g white sugar
    • 150g flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarb
    • 3 eggs
    • 1 cup mashed ripe bananas (around 2 medium size)
    • 1 teaspoon vanilla essence

    Preparation:30min  ›  Cook:40min  ›  Ready in:1hour10min 

    1. Preheat the oven to 160 degrees C and grease a cake tin.
    2. Cream butter and sugar.
    3. Slowly add the eggs and the vanilla and mix well.
    4. Fold in half of flour.
    5. Add the bananas.
    6. Fold in the rest of the flour, and transfer mixture to the cake tin.
    7. Bake the mixture for around 40 minutes.

    Absolutely love this super simple Banana Cake recipe. Don't think twice....Just Do It!  -  22 Mar 2013


    I reduced the sugar (around 40g less), omitted the milk and added rolled oats, Walnuts and brown sugar on top before baking for 40 mins at 180°C (fan assisted oven). The result was amazing. Best served warm!  -  14 May 2017
