    These are a traditional pancakes like my mum used to make, not like the fluffy American ones that are around today. See this recipe being cooked on Allrecipes Pancake Video.

    Serves: 6 

    • 2 cups (250g) plain flour
    • 1/4 teaspoon of salt
    • 2 eggs
    • 2 cups (500ml) milk
    • butter, for frying
    • caster sugar, for dusting
    • lemon, juiced

    Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Sift the flour and salt into a mixing bowl. Add the eggs and half the milk then beat until smooth. Pour in the remaining milk and continue to mix until smooth.
    2. Grease a heated frying pan with the butter then ladle in the pancake batter and swirl the frying pan to evenly coat.
    3. Cook until brown then flip and cook other side for 30 seconds or until coloured.
    4. Sprinkle the cooked pancake with lemon juice and caster sugar then serve.
