    Chimichurri is a great raw ingredient sauce recipe that originates in Argentina that can be served on steak or barbecue but also makes a good marinade.

    Serves: 6 

    • 2 tablespoons diced fresh basil
    • 1 tablespoon diced spring onion
    • 2 tablespoons diced green capsicum
    • 2 tablespoons diced fresh oregano
    • 180ml olive oil
    • 4 tablespoons white wine vinegar
    • salt and pepper, to taste

    Preparation:15min  ›  Extra time:3hours chilling  ›  Ready in:3hours15min 

    1. Combine all ingredients in a food processor or blender.
    2. Puree until almost smooth and well combined, but still with a bit of texture.
    3. Chill in the fridge for at least 3 hours or overnight for the best results.

    Made this sauce for a summer BBQ about a week ago and used it last night. Delicious and really offsets the flavour of the steak I served it with. I would recommend hand chopping or very lightly blending to make it a more chunky sauce.  -  05 Dec 2012
