Serve this raita with Indian curries: it is a fresh and creamy addition. It is also a great condiment to cool down the heat if you enjoy very spicy curries.
200g plain yoghurt
1/3 continental cucumber, grated
2 garlic cloves, crushed
1 tablespoon mint leaves, finely chopped
juice of 1 lemon
mint or coriander for garnish
- Put all ingredients into a bowl and stir to mix together. Garnish with extra mint or chopped coriander.
