Why throw away the left over bones from your roast chicken when you can use them to create a simple yet wonderful chicken stock in a slow cooker? Watch this being made in the Allrecipes Slow Cooker Chicken Video.


Makes: 2 litres stock

  • leftover carcass from a whole roast chicken
  • 2 sticks celery, diced
  • 2 carrots, diced
  • 1 onion, quartered
  • 1 bay leaf
  • 1 teaspoon fennel seeds
  • 1/2 teaspoon chilli flakes
  • 5 black peppercorns
  • 1 sprig fresh thyme
  • 2 litres of water

Preparation:10min  ›  Cook:8hours  ›  Ready in:8hours10min 

  1. Combine the chicken carcass, celery, carrots, onion, bay leaf, fennel, chilli, peppercorns, thyme and water in a slow cooker.
  2. Cook for 8 hours on Low.
  3. Strain stock through a fine sieve then chill or freeze untill needed.
