Lemon Loaf

    This is an easy to make, moist, fresh loaf that is a delight to eat just on its own.

    Serves: 8 

    • 120g butter
    • 2 eggs
    • 1/2 cup plain flour
    • 1/2 teaspoon salt
    • 1 cup caster sugar
    • 1 cup self raising flour
    • 1/2 cup milk
    • grated rind and juice large lemon
    • 1/4 cup caster sugar (extra)
    • 1/4 cup chopped nuts (optional)

    1. Cream butter and cup of sugar, adding the eggs one at a time. Beat well.
    2. Sift flours and salt together and add to the buttery mixture, alternating with the milk. Add the lemon rind (and nuts if desired).
    3. Pour into a well greased loaf tin and bake in a moderate (350 degrees F or 180 degrees C) oven for approximately 45 minutes.
    4. Mix the lemon juice with the extra caster sugar and stir until dissolved. When cake is cooked and still hot, pour the juice mixture over the cake. Allow to cool in tin.

    light and lemony, put second one back in oven for a couple of minutes under a med heat grill, and it made the topping beautifully crunchy.  -  04 Sep 2012
