This is an easy slice to make and once you have a slice, you want to go back for more. It is reminiscent of the kind of cakes grandma used to make.

Makes: 30 Slices

  • 2 Eggs
  • 1 Cup Brown Sugar
  • 1 Cup Chopped Pitless Dates
  • 1 1/2 Cups Plain Flour
  • 1 Teaspoon Vanilla Essence
  • 1/2 Cup Milk
  • 2 Tablespoons Coffee & Chicory Essence
  • 2 Teaspoons Baking Powder
  • 2 Cups Icing Sugar
  • 1 Tablespoon Coffee & Chicory Essence
  • 2 ounces Butter, melted
  • 1 to 2 Tablespoons Hot Water

  1. Grease and line a 20cm X 30cm baking tin and set aside. Preheat oven to 150 degrees celcius.
  2. Beat sugar, eggs, vanilla essence and milk. Mix well. Then add the dates and coffee & chicory essence and mix well. Turn off beater and with a spoon fold in the sifted flour and baking powder into the date mixture.
  3. Once everything is combined, pour into baking tin and put into the oven for 30 minutes. Once finished baking, allow 30 minutes for the slice to cool down.
  4. Combine the icing sugar, coffee & chicory essence, butter and hot water and mix well. Then pour over the now cold slice and refrigerate until icing is set.

Make ahead

This slice is better eaten a day after it is made.
