Pink Salmon Patties

    These pink salmon and cannellini bean patties are fresh and delicious with the flavours of lemon, dill and sweet chilli sauce.

    Serves: 4 

    • 1 (400g) tin pink salmon
    • 1 (400g) tin cannellini beans
    • 1 egg
    • zest of 1 small lemon
    • 2 tablespoons dill, finely chopped
    • 1 tablespoon sweet chilli sauce
    • salt and pepper, to taste
    • 1/2 cup almond meal

    1. In a large bowl, mash the salmon and cannellini beans with a potato masher. It is okay if the beans are still quite lumpy.
    2. Mix in the egg, lemon rind, dill, sweet chilli sauce, salt and pepper.
    3. Pour the almond meal into a bowl. Form patties from the salmon mixture and coat in the almond meal.
    4. Fry the patties on medium-high heat in oil until brown on both sides and cooked through, about 5 minutes on each side.

    These salmon patties are really nice. You can substitute the cannellini beans for potato for a different texture. They are also nice with finely sliced red onion added.  -  17 May 2012


    These were really delicious, however, they were really wet to try and cook and I found the almond meal added no value. I did drain the cans but obviously not enough. So they all pretty well fell apart when I cooked them. The cannellini beans were yummy in it!  -  05 Mar 2013
