Garlic Soup with Grapes - Ajo Blanco con Uvas

    This cold Spanish soup, Ajo Blanco con Uvas, is perfect in summer. Fresh almonds, just out of their shells, are traditionally used. This version uses ground almonds.

    Ingredients
    Serves: 6 

    • 2 tablespoons (15g) ground almonds
    • 60g toasted breadcrumbs
    • 5 cloves garlic
    • sea salt to taste
    • 2 tablespoons olive oil
    • 1 tablespoon white wine vinegar
    • 500ml water
    • 6 cubes ice
    • 500g seedless green grapes, peeled

    Directions
    Preparation:30min  ›  Ready in:30min 

    1. Pound almonds, breadcrumbs, garlic and salt together in a mortar to form a paste.
    2. Gradually mix in oil. Stir in vinegar.
    3. Place mixture in a tureen. Stir in water, ice and grapes. Let rest in a cool place 30 minutes before serving.

    Also try...

    Use rockmelon instead of grapes, sliced into bite sized pieces.

    Sweet, rich, indulgent. Tasted great, looked spectacular. Would make again -- hope it impresses! (I layered as per CHRISTINE1906, and mixed 1/4c of the white sugar in with the brown as per BROWNIEBAKER). See pic.  -  28 Jun 2017  (Review from Allrecipes USA and Canada)
