Quick Chicken Casserole

    This casserole is so easy. Just mix together chicken, stock, sour cream and a tin of condensed soup then top with crackers and bake. What an easy midweek meal.

    Serves: 6 

    • 1 sleeve buttery round crackers, crushed
    • 2 tablespoons butter, melted
    • 4 cups (1 litre) water
    • 4 cups (1 litre) chicken stock
    • 1 pinch salt and ground black pepper, to taste
    • 3 chicken breast halves, boneless and skinless, cubed
    • 750g sour cream, or to taste
    • 750g condensed cream of chicken soup

    1. Preheat an oven to 180 degrees C. Mix the crackers and melted butter together in a bowl; set aside.
    2. Bring water and chicken stock to a boil in a saucepan over high heat. Season with salt and black pepper. Add the chicken. Reduce heat to a simmer then cook, stirring occasionally, until chicken is no longer pink in the centre, 5 to 7 minutes. Drain the chicken; set aside. Whisk together the sour cream and cream of chicken soup in a large bowl. Stir in the chicken then transfer the mixture to a baking dish. Sprinkle the cracker mixture on top.
    3. Bake in the preheated oven until bubbly, 25 to 30 minutes.


    If making for the first time add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavour. Serve over cooked white rice.

    I made this for dinner last night and my family and I loved it! I did a few alterations, but they were quantity ones. I used one soup can size of chicken broth, 3 cups of water with added chicken bouilon cubes, 2, I used 2 cans of cream of chicken soup with a 16 oz container of sour cream.I had vegetable flavored ritz crackers and used 4 tbls of melted butter. By the way these crackers are good. I made rice and brocolli on the side and they spooned the chicken casserole over the rice. Very, very good!!
