Cranberry Almond Muesli Bars

    A mixture of oats, pumpkin seeds, almonds, nuts and cranberries baked together with condensed milk make a handy snack for school lunch, tramping or mums on the go.

    Serves: 24 

    • 2 cups (160g) quick oats
    • 1 cup (80g) rolled oats
    • 1/2 cup (70g) pumpkin seeds
    • 1/2 cup (60g) almonds, slivered
    • 1 cup (140g) mixed nuts
    • 1 cup (120g) dried cranberries
    • 1 (395g) tin sweetened condensed milk

    1. Preheat an oven to 180 degrees C. Line a 33x22cm cake tin with lightly-greased baking paper; 2cm or so of baking paper should stick up on 2 sides to form lifting handles.
    2. Mix the quick oats, rolled oats, pumpkin seeds, almonds, mixed nuts, cranberries and sweetened condensed milk together in a bowl; spread into the prepared tin, evenly pressing into the corners and out to the sides.
    3. Bake in the preheated oven until the edges are golden brown, 20-25 minutes, using slightly less time for chewier bars and slightly more time for crunchier bars.
    4. Allow the the bars cool for 5 minutes in the pan before using the baking paper to lift them from the tin. Use a sharp knife to cut into bars. Let the bars cool completely and store in an airtight container.


    It's easy to press the oat mixture into the pan using wet hands or a wet spatula. The water keeps the oat mixture from sticking to you or your utensil.

    Keeping the quantities the same I substituted trail mix for the sultanas and crunchy nut cornflakes for the rice bubbles  -  03 Sep 2015


    I am never buying granola bars from the store again. I used only the quick cooking oats, added sunflower seeds and omitted the mixed nuts. I also added a pinch of cinnamon, allspice and nutmeg.     my husband does not like nuts so i just omitted them altogether. substituted 1 cup raisins and 1/2 cup craisins (dried cranberries) and used 3 cups old-fashioned oats. i added about 1/2 brown sugar 1/2 tsp cinnamon mixed it up really good before adding the sweetened condensed milk. after pressing into the pan i drizzled some honey on the top along with a cinnamon sugar blend. ooohhhhhh it was so good. my husband and my 5 year old beg me to make this. making it at least twice a week.  -  26 Jun 2011  (Review from Allrecipes USA and Canada)
