Balsamic Cucumber and Tomato Salad

    Cucumber and tomatoes mixed with balsamic vinegar, olive oil then sprinkled with salt and pepper make a quick and easy summer salad that's not to filling on a warm day.

    Serves: 4 

    • 1 large cucumber, peeled and sliced
    • 2 ripe fresh tomatoes, diced
    • 2 tablespoons balsamic vinegar
    • 2 tablespoons olive oil
    • 1 pinch salt and pepper to taste

    1. Place cucumber and tomatoes in a bowl. Pour in olive oil and balsamic vinegar. Season with salt and pepper. Toss gently to coat. Refrigerate until ready to serve.
