Beetroot Dip with Sour Cream and Chives

    A delicious creamy beetroot dip combined with sour cream and chives. It is great for parties and kids will love it.

    Serves: 6 

    • 450g Beetroot
    • 1/2 cup sour cream
    • 2 tablespoons chives (chopped finely)
    • 1-2 cloves garlic (minced)

    1. Boil the beetroot until soft, about 30-40 min, depending on the size of your beetroot. Drain and allow to cool slighty. Once cooled enought to handle, peel and trim the beetroot.
    2. In a food processor, blend the beetroot until smooth. Remove from food processor and stir in remaining ingredients. the beetroot dip is now ready to serve.
