Great way to use up home grown tomatoes. Makes a great gift and is also good for street stalls and fetes. It is an old family recipe.
Makes: 6 jars approx
2.5kg ripe tomatoes chopped
4 large onions chopped
1 tbls mustard
1/4 tsp cayenne pepper(optional)
1 handful salt
to cover vinegar

- Place tomatoes in large bowl. Put onions on top. Sprinkle with salt. Let stand over night.
- Drain off liquid, put everything in a large pot, cover with vinegar. Boil for about 1 1/2 hours.
- Can thicken with corn flour if desired. Ladle into hot jars and seal.
