Choc Chip and Macadamia Biscuits

    A simple biscuit recipe to make with the kids or to enjoy alone. Make them into fun shapes using your favourite cookie cutter. This recipe has less sugar than most choc chip biscuit recipes as I often find others too sweet.

    Makes: 12 

    • 125g butter
    • 1/2 cup white sugar
    • 1 egg
    • 1 teaspoon vanilla essence
    • 3 tablespoons milk chocolate chips
    • 3 tablespoons macadamia nuts, chopped
    • 1 1/2 cups plain flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt

    1. In a bowl, cream the butter and sugar.
    2. Add the egg and vanilla essence. Mix well.
    3. Stir in the chocolate chips and macadamia nuts.
    4. In a separate bowl, combine flour, baking powder and salt.
    5. Stir flour mixture into wet ingredients.
    6. Roll into ball, wrap in plastic and refrigerate for 2 hours or until hard enough to roll out.
    7. Roll out mixture, cut into favourite shapes and place on tray lined with baking paper.
    8. Bake for about 12 minutes at 180 degrees C.
    9. Cool biscuits on tray briefly and then transfer to wire rack to cool.
