Greek Halva / Semolina Pudding- a different version

    Greek Halva is a traditional semolina pudding with olive oil and syrup. It is widely used in fasting days. In the early 1900’s, Greek housewives in Asia Minor used it as a common dessert. It is very cheap and simple with no eggs or milk. Here we will not make the traditional recipe but another version which is lighter with fewer calories. It is done in no time.

    Serves: 12 

    • 250 grams coarse semolina
    • 1 liter (4 cups) water
    • 200 grams sugar
    • 3 tablespoons olive oil
    • 2 tablespoons cocoa powder
    • 1 zest of orange
    • 1 zest of lemon

    1. Place in a heavy pot the water, the zest, the sugar and the olive oil. Bring to a boil.
    2. Remove from heat when the bubbles start. Add the semolina and mix well with a wooden spoon. The mixture should be thick.
    3. Pour half of the semolina mixture into a pudding mold. Stir the cocoa into the rest half of it, mixing well. Place the cocoa mixture on top of the white semolina mixture.
    4. Let it cool for 1 hour at room temperature before serving. Enjoy it.
