Makes: 16 

  • 1 x 450g can pineapple peices
  • 2 cups wholemeal self-raising flour
  • 1 cup plain flour
  • 1 tsp bicarbonate of soda
  • 2 tsp ground cinnamon
  • 1 cup brown sugar, firmly packed
  • 1/3 cup shreadded coconut
  • 1/3 cup sultanas
  • 2 eggs, lighly beaten
  • 1 1/2 cups milk
  • 3/4 cup oil
  • butter to serve

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Lightly grease 16 holes of 2 x 12-hole muffin pans (1/3 cup capacity).
  2. Drain pineapple; reserve 1/4 cup pineapple.
  3. Sift flours,bicarb soda and cinnamon into a bowl; return husks to bowl. Add the sugar, coconut,sultanas and pineapple. Stir in combined eggs, milk and oil; mix until just combine. (Do not over mix.) Spoon miture into prepared pans. Spoon reserved pineapple over top of muffins.
  4. Cook in a moderately hot oven 190c (375f) for about 20 minutes, or until cooked when tested. Turn on to a wire rack to cool.
  5. Serve muffins warm or cold with butter.
