Lightly grease 16 holes of 2 x 12-hole muffin pans (1/3 cup capacity).
Drain pineapple; reserve 1/4 cup pineapple.
Sift flours,bicarb soda and cinnamon into a bowl; return husks to bowl. Add the sugar, coconut,sultanas and pineapple. Stir in combined eggs, milk and oil; mix until just combine. (Do not over mix.) Spoon miture into prepared pans. Spoon reserved pineapple over top of muffins.
Cook in a moderately hot oven 190c (375f) for about 20 minutes, or until cooked when tested. Turn on to a wire rack to cool.
