Pineapple Christmas Punch

    For a more tart flavor in this delicious non-alcoholic punch substitute cranberry juice for the cran-apple juice.

    Serves: 15 

    • 2 cups (500ml) water
    • 150g sugar
    • 1/2 teaspoon ground cinnamon
    • 4 cups (1 litre) pineapple juice, chilled
    • 4 cups (1 litre) cranberry-apple juice, chilled
    • 4 cups (1 litre) ginger ale, chilled

    Preparation:10min  ›  Ready in:10min 

    1. In a saucepan, bring the water, sugar and cinnamon to a boil; stir until sugar is dissolved. Chill. Just before serving, combine the syrup mixture, juices and ginger ale in a punch bowl or large pitcher. Serve over ice.

    I made this for my Christmas party and it was a big hit. Here's a tip though, double the recipe if you are making it for more than 6 people. Also, leave a bottle of rum next to the bowl for people who would like to add a litte "naughty" to their punch. That way, you don't have to make two whole batches. Another FYI, if you have leftovers, it keeps well in the refrigerator for 4-5 days. Just add more gingerale to give it the fizz each time.     This recipe is great! If you are looking for a party punch that has a little hint of Christmas spice this is what you are looking for. I just had a Christmas party with about 30 people and EVERYONE had at least two cups. I made a "naughty" batch and a "nice" batch by adding Rum to the naughty batch. I had to make seconds and thirds of the naughty batch. It is great with and without alcohol!! I didnt change anything except I doubled the recipe!     What a giant hit! I just served this today for my Sunday school class and this is all they drank. I had coffee and OJ too, but this is all they touched. I highly recommend it. I made an ice ring and put cranberries in the ice. As the ice melted the cranberries floated in the punch and it was even more festive! Thanks Edna - you're a life saver.
