Potato and Ham Salad

    This is an easy and yummy salad that I often make for weekend lunch. The ingredient amounts can be altered depending on personal tastes.

    Serves: 4 

    • 4 medium potatoes
    • 3 eggs
    • 4 slices good quality leg ham
    • handful Italian parsley
    • 1 - 2 stalks spring onion
    • 1/2 cup mayonnaise
    • salt and pepper

    1. Wash and chop up the potatoes into chunks and boil until tender. Meanwhile, hard boil the eggs. Set both aside to cool.
    2. Chop up the ham and parsley, and finely dice the spring onion.
    3. When eggs are cool, peel and roughly dice. Combine with potatoes, ham, parsley and spring onion. Stir in mayonnaise, then add salt and pepper to taste.
