Preheat oven to 180 C. Grease and flour a 23x30cm cake pan.

In a large bowl, combine flour, sugar, cocoa, salt and bicarbonate of soda. Make a well in the centre, and pour in the oil, vinegar, water and vanilla essence.

Mix well, then pour into the cake pan. Bake in preheated oven for 40 minutes, or until a skewer inserted into the centre comes out clean.
I would like to ask how strong is cider vinegar. I live in the Czech Rep. and cannot get it here so I would like to change it for usual vinegar. Ours is 8% (for instance in Poland they have 10% so I must recount Polish recipes). Great cake!

Loved making this cake. It is egg and dairy free and could easily be gluten free. I have made this one for two birthdays. It keeps really well. For one birthday I made it two days before and didn't finish the last of it til a week later. It was still moist and delicious even then. The ingredients are all things I keep in the pantry and it was really easy for the kids to help. It doesn't require a mixer so is very easy to prepare. I also added more sugar as was recommended by previous people but if you are icing the cake it probably isn't necessary.

I didnt have all the ingredients listed so what I did was substituted cider vinegar with vinegar 1 tbs, and I added an egg and half cup less water, I also only added 1 tsp of salt as I was worried it would be a bit salty....and 2 extra tbs of cocoa...my only problem is I can't taste it properly as I have a blocked nose, but the kids say its awesome!! (4 year old)
Baked this for a birthday and it was moist and fluffy and melted in your mouth! Combined with the cheerful butter icing recipe and it was a smash! Better than other chocolate cake recipes that I've tried.
