A simple chocolate cake recipe which is also egg free and dairy free so fine for vegans. Decorate however you like.

Ingredients

Serves: 24
  • 3 1/4 cups (410g) plain flour, sifted
  • 2 cups (440g) caster sugar
  • 3 tablespoons good quality cocoa powder
  • 2 teaspoons salt
  • 3 teaspoons bicarb soda
  • 1/2 cup (125ml) vegetable oil
  • 1 1/2 tablespoons cider vinegar
  • 2 cups (500ml) water
  • 1 1/2 teaspoons vanilla essence

Preparation method

Prep: 15 minutes | Cook: 40 minutes
1.
Preheat oven to 180 degrees C. Grease and flour a 23x30cm cake pan.
2.
In a large bowl, combine flour, sugar, cocoa, salt and bicarb soda. Make a well in the centre and pour in the oil, vinegar, water and vanilla essence.
3.
Mix well, then pour into the cake pan. Bake in preheated oven for 40 minutes, or until a skewer inserted into the centre comes out clean.

Easy
Next time I will cut back on the cocoa powder. Very strong, kiddies will not eat it. It looks great, very moist. There was so much mixture. Had to use two small cake tins and six cupcakes as well. Overall, great to find a good egg free recipe. I will definitely try it again.

I would like to ask how strong is cider vinegar. I live in the Czech Rep. and cannot get it here so I would like to change it for usual vinegar. Ours is 8% (for instance in Poland they have 10% so I must recount Polish recipes). Great cake!

Loving this recipe so much. I made it at my grandma’s house. The combination of recipes goes well with each other and the taste is certainly admirable. www.gourmandia.ca and www.coffeefashion .com also have interesting recipes that you’ll surely want to try!

Loved making this cake. It is egg and dairy free and could easily be gluten free. I have made this one for two birthdays. It keeps really well. For one birthday I made it two days before and didn't finish the last of it til a week later. It was still moist and delicious even then. The ingredients are all things I keep in the pantry and it was really easy for the kids to help. It doesn't require a mixer so is very easy to prepare. I also added more sugar as was recommended by previous people but if you are icing the cake it probably isn't necessary.

Something else. I used plain vinegar and added 500grms of sugar in total. next time I will add some choc chip pieces. great recipe the family loves.

Easy Peasy !! Made this into cupcakes, they are very morish and everyone loves them... added another 90grms of sugar and just used plain vinegar

Used different ingredients. I didnt have all the ingredients listed so what I did was substituted cider vinegar with vinegar 1 tbs, and I added an egg and half cup less water, I also only added 1 tsp of salt as I was worried it would be a bit salty....and 2 extra tbs of cocoa...my only problem is I can't taste it properly as I have a blocked nose, but the kids say its awesome!! (4 year old)
