This is a great snack or quick lunch and amazingly good for you. It's also a really healthy way to start your day.

Serves: 1 

  • 1 cup cucumber (about half a cucumber), peeled and seeded
  • 1/2 cup red capsicum
  • 1 tomato
  • 1 1/2 teaspoon lemon juice
  • 1/2 teaspoon sugar
  • salt to taste
  • 4 ice cubes

  1. Cut all the vegetables into chunks.
  2. Place all ingredients into a blender and blend until thoroughly combined and smooth.
