Orange Mulled Wine

    After having mulled wine while on holiday in Tassie I made my own at home, I love this recipe and use it now at all my cold weather parties.

    Serves: 8 

    • 500ml water
    • 1/2 cup sugar
    • 2 firm oranges
    • 15 cloves
    • 1 lemon
    • 1 2cm piece of ginger, peeled and sliced in half longways
    • 1 cinnamon stick
    • 2 bottles red wine, I use a Cab Sav

    1. In a large saucepan boil the water and dissolve the sugar in it.
    2. While the water is boiling prepare the fruit. Finely zest the two oranges. Peel one and add reserve the slices. Stick the 15 cloves into the other. Zest the lemon and slice in half.
    3. When the sugar water is ready add the orange zest, orange peel, clove studded orange, lemon zest, lemon halves, ginger and cinnamon. Stir.
    4. Straight away add the red wine then put on the lid and heat very gently on a very low heat for about 15 minutes. Do not boil.
    5. Strain off the fruit and spices to serve.
