Rockmelon Fizz

    A great way to enjoy rockmelon on hot days! To make sugar syrup - mix 2 parts sugar and 1 part water. Bring water to the boil in a saucepan and add sugar. Remove from heat once sugar is melted, cool and bottle.

    • 900g rockmelon
    • 1 cup (250ml) champagne
    • 2 tbsp lime juice
    • 1 tsp lime zest
    • mint to garnish
    • sugar syrup to taste

    1. Chill rockmelon overnight in the fridge.
    2. Place rockmelon, champagne, lime juice and zest in a blender and blender until smooth.
    3. Add cooled sugar syrup to taste. Pour into long glasses or martini glasses and serve immediately, garnished with mint springs.
