Nimbu Pani

    Nimbu pani is a drink found in every Indian household. It's just fresh lime juice, but it is either sweetened with sugar or has salt and pepper added. I prefer the pepper version, amazingly refreshing on a hot day!

    Serves: 2 

    • 10 large fresh limes
    • salt and freshly ground black pepper

    1. Squeeze the limes. It's a good idea to roll them firmly under the palm of your hand first to loosen the juice.
    2. Add a sprinkling of salt and fresh pepper and mix well. Serve over ice if desired, or dilute with cold water if it's too strong.
