Fresh Lemon Slices

    Makes: 20 

    • 1 Lemon's juice
    • 1 Lemon's Zest
    • 250g butter
    • 50g icing sugar
    • 1tsp vanilla extract
    • 250g plain flour
    • 4 eggs
    • 175g white sugar
    • extra icing sugar (for dusting)

    1. Grease a slice tin. Preheat oven to 190C
    2. Put the butter, icing sugar, vanilla extract and cream until light and fluffy. Sift 250g plain flour and fold into the creamed mixture.
    3. Spread into tin and bake in the oven for 20 minutes.
    4. Put the eggs, white sugar and lemon juice and zest into a bowl. Stir to blend but not beat. Pour over baked pastry.
    5. Return tin to oven for 20 minutes.
    6. Remove from the oven and sift extra icing sugar over the slice. Cut it and remove from the oven.
