Savoury Muffins

    Delish savoury muffins full of fetta, spinach, pumpkin and zucchini. Yum yum and so easy.

    Makes: 12 12 large or 18 medium

    • 1 cup cubed pumpkin
    • 1/2 cup cubbed fetta cheese
    • 1/2cup sun or semi dried tomatoes
    • 1 cup zucchini, finely chopped
    • 1 large handful chopped spinach
    • pinches salt and pepper and mixed herbs
    • 2 teaspoons wholegrain mustard
    • 3/4 cup parmesan cheese
    • 3/4 cup milk
    • 2 large eggs
    • 2 cups flour
    • 4 teaspoons baking powder
    • 3 teaspoons sunflower seeds (optional)

    1. Cube pumpkin and cook for few minutes in microwave to soften up a wee bit.
    2. Put the prepared (cubed, finely chopped...) fetta, semi dry tomatoes, zucchini, pumpkin, spinach, herbs, mustard and cheese in bowl and toss.
    3. Lightly beat milk with egg and pour into veggies.
    4. Sift dry ingredients on top then gently mix all ingredients together till just combined and spoon into muffin trays. Top with sunflower seeds and bake at 200 C for 15-20 minutes.

    As a healthy alternative for an afternoon snack these are awesome. I put the balance in the freezer, microwave for 30 sec. and wahlah! Fantastic!  -  02 Jul 2011
