Vegetable & Egg Pie

    This is the healthy way to eat a pie!!! The sweet chilli sauce gives it a real kick - add more if you like!

    Serves: 4 

    • 2 1/2 cups Frozen winter mixed vegetables
    • 1 cup Grated edam cheese
    • 4 Eggs
    • 2 large Reduced fat puff pastries
    • 2 tablespoons Sweet chilli sauce
    • 2 tablespoons Vegetable stock

    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat oven to 180 degree C.
    2. Generously spray cooking oil on an oven proofed dish. Line up the pastry on top to form a base. Put the frozen veges & cheese at the base, and mix in stock and sweet chilli sauce. Whisk the eggs together and pour over the mixture. Use the other sheet of pastry as a cover to make the top of the pie.
    3. Bake in the oven for 30 minutes or until top of pastry is golden.
