    Creamy Butternut Pumpkin Soup

    Serves: 6 

    • 1 whole Butternut Pumpkin (peeled & cubed)
    • 2 Onions (Finely diced)
    • 2 cups Vegetable Stock (enough to just cover pumpkin)
    • 2 cups Bacon (finely Diced)
    • 1/2 cup Fresh Cream

    Preparation:30min  ›  Cook:30min  ›  Ready in:1hour 

    1. Peel & dice your Pumpkin, Onion & Bacon.
    2. Put your Pumpkin & Onion into a large heavy base saucepan with the vegetable stock and boil until pumpkin is soft .
    3. Strain your pumpkin & onion keeping a little of the stock set aside , Then add your diced bacon and blend with a mixer until pureed add your fresh cream and a little of your vegetable stock . Mix well and serve with hot crusty bread rolls .
