Oat, parmesan & sesame seed crusted chicken

    A different type of chicken schnitzel, breasts can also be cut into strips to use as finger food for a party. Any left over crumbing mix can be put into a zip lock bag and put into freezer to be used next time. I make this gluten free by using GF oats & flour

    Serves: 4 

    • 4 chicken breast fillets
    • plain flour
    • 1 egg, lightly beaten
    • 2 tablespoons milk
    • 1 tablespoon grain mustard ( optional )
    • 3/4 cup rolled oats
    • 3/4 cup fresh grated parmesan cheese
    • 1/4 cup sesame seeds
    • 1 tsp chicken stock powder or cube

    1. Flatten breasts with a rolling pin between two sheets of glad wrap to desired thickness
    2. Toss chicken in flour to coat, dip into combined egg, milk & mustard.
    3. Coat in combined oats, parmesan, seeds & stock powder. Refrigerate 15 mins
    4. Fry in oil, make sure oil is hot otherwise chicken will stick, fry on medium heat until golden and cooked through thoroughly. Drain on paper towel.
