Cranberry and Peanut Cookies

    After getting a little tired of the same chocolate-chip cookie recipe I normally used, I swapped out the choc-chips for a slightly healthier option of cranberries and peanuts. Just a slight variation on the classic.

    Makes: 30 cookies

    • 250 g softened butter
    • 1 tspn vanilla extract
    • 3/4 cup caster sugar
    • 3/4 cup firmly packed brown sugar
    • 1 egg
    • 2 1/4 cups plain flour
    • 1 tspn bi-carbonate soda
    • 175 g cranberries
    • 200 g raw peanuts

    1. Preheat oven to 180 degrees and grease two to three oven trays
    2. Using an electric mixer, beat together butter, sugars, vanilla extract and egg in a medium bowl until light and fluffy.
    3. Transfer to a large bowl and stir in sifted flour and soda in a couple of batches. Stir in cranberries and peanuts.
    4. Roll mixture into balls and place on trays about 5cm apart. Bake in oven for approximately 15 minutes. Leave to cool on trays.


    The butter can be replaced with dairy-free, such as Nuttelex as I use, for any allergies. Same for the peanuts, which can be replaced with the same amount of any other nut or fruit.
