    This tomato rice dish couldn't be easier, makes a good side dish and is also an easy and filling lunch or main. Add kidney or borlotti beans for a Mexican-inspired dish.

    Ingredients
    Serves: 4 

    • 1 cup (185g) uncooked white rice
    • 1 clove garlic, crushed
    • 2 cups water
    • 300g jar salsa

    Directions
    Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Combine all ingredients in a large saucepan. Bring the water to the boil and then reduce the temperature to simmer. Simmer for 20 minutes or until the rice is tender. Fluff the rice when finished.

    Tip:

    For extra flavour, use vegetable stock instead of water.
