Blueberry Yoghurt Muffins

    Moreish muffins to use up excess blueberries from my fridge (or use frozen berries of any kind if you prefer).

    Makes: 12 muffins

    • 1/2 cup margarine
    • 1/2 cup castor sugar
    • 2 eggs
    • 1 cup buttermilk (or milk)
    • 1/2 cup blueberry (or any flavour) yoghurt
    • 250g blueberries
    • 2 and 1/2 cups self raising flour

    Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Pre-heat the oven to 190 degrees C (180 degrees C fan forced).
    2. Grease a 12 cup muffin pan.
    3. Cream margarine and sugar in mixing bowl.
    4. Beat in the eggs followed by the buttermilk and yoghurt.
    5. Stir in the blueberries.
    6. Carefully fold in the self raising flour.
    7. Spoon into muffin pans.
    8. Bake in oven 20-25 minutes until risen and golden.
    9. Cool and serve with some extra yoghurt. Yum!

    These are good but could do with more berries and maybe some white choc chips Will make them like this next time a good base and EASY recipe, thanks!  -  18 Mar 2012
