Paint a glass or porcelain plate with the sambal sauce then sprinkle the salt over it lightly. Spray with some cooking spray.
Slice thin slices of potato with a mandoline slicer or peeler and place them on the plate. Give them a little slip back and forth to collect some of the sauce, cooking spray and salt mixture turn them over and repeat.
Spray with a little more cooking spray and place the plate in the microwave on high for 3 minutes.
Turn each slice over and microwave for another 2-3minutes or crispy.
Some may be slightly soft to the touch, though they may crispy up if you leave them in the microwave with the door open slightly for about a minute.
If you don't want them to be spicy, you can always change the Sambal sauce for some BBQ sauce or sauce of choice or you could just leave them plain :)

in plastic freezer bag, add sauce & herbs as desired
add potato slices & shake... just like makes wedges for the oven
then place on sprayed baking paper on plate in microwave - 05 Apr 2011
