Boursin is a French cheese, similar in texture to cream cheese, you can get at most big supermarkets. You add the block to this soup and blend it in. Its gives a whole new taste to an old favourite.
Put the chopped, peeled pumpkin into the pressure cooker. Peel the potatoes and add them. Add salt and pepper and the 2 cups of water.
Bring the pressure cooker to pressure and cook under pressure for 30 minutes.
Carefully remove the lid and then add the Boursin. Mix it in to the soup well with a stick blender. (Or do it all in a blender). Add more water if you need at this stage.
