A very simple and tasty zucchini soup make quickly in the pressure cooker. The potatoes make it filling enough for a meal and the small amount of cream gives it a nice texture without weighing it down.
Put all the ingredients (except the cream) in a pressure cooker and cover with water by a couple of centimetres.
Put on the lid and bring it to pressure and cook for 15 minutes.
Cool the lid by running under cold water then remove it. Blend the soup with a stick blender until it's all smooth. Stir in the cream. Adjust the seasonings if you like.
