A very simple and tasty zucchini soup make quickly in the pressure cooker. The potatoes make it filling enough for a meal and the small amount of cream gives it a nice texture without weighing it down.

    Serves: 6

    • 1 kg zucchini, washed and cut into chunks
    • 1 large potato or 2 small, peeled and diced
    • 2 cloves garlic
    • 1 handful chopped fresh coriander
    • 1 small onion, roughly chopped
    • salt and pepper to taste
    • water (or stock) to cover
    • a tablespoon of cream

    2. Put on the lid and bring it to pressure and cook for 15 minutes.
    3. Cool the lid by running under cold water then remove it. Blend the soup with a stick blender until it's all smooth. Stir in the cream. Adjust the seasonings if you like.
