Maddie's Banana and Choc Chip muffins

    I started making these muffins when I was about 12. Everyone loves them and they are really easy to make. You can substitute the banana and chop chips for things such as apple, blueberries and apricots. Hope you enjoy these tasty treats =]

    Makes: 12 

    • 2 cups self raising flour, sifted
    • 1 cup plain flour sifted
    • 1 cup brown sugar
    • 1 teaspoon bi-carb soda
    • 2 3 eggs
    • 1 1/2 cups milk
    • 3/4 cup vegetable oil
    • 3 overripe bananas
    • 2-3 cups milk, white and/ or dark choc chips

    1. Preheat oven to 180 degrees fan forced. Grease muffin tray with either cooking spray or muffin cases.
    2. Combine all dry ingredients in a bowl. Combine wet ingredients in a separate bowl.
    3. Make a well in the dry ingredients and slowly add wet mixture. Mix until well combined.
    4. In a separate bowl mash up the bananas then add them to the mixture and mix. Add choc chips and mix.
    5. Spoon mixture into cases until about ¾ full. Place in oven and cook for 20 minutes or until a skewer inserted into the middle comes out clean.
    6. Take out of oven and leave in tray for 5 minutes then transfer onto a cooling rack. Cool (Or I like to eat them when still partially warm as then chocolate is melted and amazing =]) Enjoy!!!!!
