Baked Vegetable Dish

This is a little different from most baked vegetable recipes. It is a layered dish of eggplant and zucchinis covered with a cheesy tomato sauce. It never lasts long when I make it.

Serves: 10 

  • 1 Large onion, chopped
  • 1 red capsicum, thinly sliced
  • I large eggplant, thinly sliced
  • 1 large zucchini, thinly sliced
  • 1 large tomato. thinly sliced
  • 1 Cup tomato juice
  • 1/2 cup grated Parmesan cheese
  • 1tablespoon vegetable oil

Preparation:20min  ›  Cook:45min  ›  Ready in:1hour5min 

  1. Preheat oven 160 degrees C. Saute the onions in vegetable oil
  2. Line a baking dish with the onions - any kind will do. I usually use either a square cake tin or a loaf pan.
  3. Then add a layer of the eggplant, then add a layer of the capsicum, than add a layer of the zucchini, then the layer of tomato.
  4. Pour the tomato juice over the top and down the sides of the vegetables.
  5. Cover with the Parmesan cheese
  6. Cover the dish with foil than bake for 30-40 min
  7. Take foil of and bake until browned on top - approx 10-15 minutes. But check it at 10

Serving suggestion

Serve with a green salad


The amount of Tomato Juice and Parmesan Cheese required will depend on the size of your dish
