Strictly Vegetarian Chocolate Cake

    Its a non-dairy, vegan chocolate cake which is delicious. Its perfect for people with allergies to dairy products and whoever wants something light and healthy and for people who are fasting.

    Serves: 12 

    • 3 1/2 cups plain flour
    • 2/3 cup cocoa powder
    • 3 tspns baking powder
    • 1 tspn baking soda
    • 2/3 cup vegetable oil
    • 2 cups sugar
    • 2 cups cold water
    • 1 orange (just the rind, grated)
    • 1/4 tspn vanilla powder or essence

    Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

    1. Preheat oven to 170 degrees celcius. Mix together all dry ingredients except sugar in a bowl.
    2. Beat oil and sugar in another mixing bowl.
    3. Then add the cold water, orange rind and vanilla and mix again.
    4. Add the dry ingredients into the mixing bowl and beat until they have blended well together.
    5. Pour mixture into a 25-30 cm tin and bake for 35-40 minutes.

    Serving suggestion

    You can cover it with any chocolate icing, as it tastes even better.

    This cake worked out great - the orange rind just comes through the chocolate flavour. I used 1 3/4 cups of sugar instead of 2 whole cups and we didn't use any icing, just added whipped cream and strawberries when serving.  -  13 May 2012

    This cake looked great when it had finished baking, however, it is not edible. The taste was terrible - it tasted of flour. The birds and other local wildlife were given this cake to eat as it is not fit for human consumption.  -  16 Nov 2012
