Apple and Banana Pastry Squares

    These fruit pastries are a quick dessert or nice for a sweet fix on those cold nights. The banana forms a sticky sauce base with the apple giving you something more substantial to snack on. Topped off with the spices its a real treat. I formed this recipe while looking to use up some fruit that I had sitting around.

    Makes: 5 Approx. Depending on how generous you fill them.

    • 3 Granny Smith green apples
    • 2 bananas
    • 1/2 tablespoon white sugar
    • 1/8 teaspoon nutmeg
    • 1/8 teaspoon cinnamon
    • 1 teaspoon mixed spice
    • 2 sheets frozen puff pastry
    • 1 tablespoon approx milk

    1. Preheat oven to 200 celcius.
    2. Peel and chop apples and banana and put in a saucepan.
    3. Add just enough water to cover the bottom of the pan and stop the fruit sticking.
    4. Add sugar and spices and bring to the boil. The banana will cook quicker than the apple so don't chop your apple too big.
    5. Boil stirring to stop the banana from sticking to pan and form a sauce as it breaks down . Cover and turn heat down to simmer to stew the apples.
    6. Remove lid and allow the liquid to reduce down to a sticky banana mixture.
    7. Cut frozen pastry sheets into quarters.
    8. Allow mixture to cool slightly and place spoonfuls into the centre of each pastry square.
    9. Brush around all four edges with some milk and fold the corners into the centre over top of the mixture to produce a square pocket.
    10. Brush some milk over the top and place them on a baking paper lined tray.
    11. Cook for 20 mins or until pastry is cooked and golden.
    12. Cool on wire rack and enjoy.
