    50 minutes

Perfect for parties or keep them in the freezer for easy snacks. Sausage rolls with apple and carrots. I make these in bulk, feel free to halve the recipe.

    Makes: 4 Baking trays filled.

    • 1kg sausage mince
    • 1 Tbsp Worcestershire Sauce
    • 2 Tbsp tomato sauce
    • 2 tbsp chopped parsley
    • salt and pepper
    • 2 large apples (peeled and cored)
    • 2 large onions
    • 2 large carrots
    • 1 cup (approx) breadcrumbs
    • 6 sheets puff pastry
    • 1 egg (lightly beaten)

    Preparation:30min  ›  Cook:20min  ›  Ready in:50min

    1. Preheat oven to 210 deg C. (I use a fan forced oven - times and temp may differ slightly.)
    2. In a large mixing bowl add the sausage mince, worcestershire sauce, tomato sauce, parsley, salt and pepper.
    3. Finely chop apples, carrots and onions (I use the grater on my food processor for this). Add to other ingredients in bowl.
    4. Mix all ingredients together (using your hand is the best method), adding the breadcrumbs as you go. Aiming for a moist but not sticky workable consistency.
    5. Divide each pastry sheet into two and brush a line of beaten egg along the cut.
    6. Spread the mixture in two lines along the pastry.
    7. When finished, roll each half of the pastry towards the centre and press along the egg. Slice into desired size for sausage rolls.
    8. Brush beaten egg on top.
    9. Place onto greased baking trays (seam side down) and bake for 20 mins or until golden in colour.

Can be kept in freezer for up to 3 months.
