This is a relatively healthy pork dish with a chunky apple and pecan topping, if desired you could exchange the medallions for chops.

Serves: 4 

  • 2 tablespoons of salt reduced butter
  • 1 red apple, skin on cored and sliced into thin wedges
  • 4 pork loin medallions (Heart Smart)
  • 1/4 cup chopped pecans
  • 2 tablespoons brown sugar

  1. In a large frypan add the butter until it starts to sizzle then add a layer of apple. Cook for 1 minute then turn and cook the other side. Push to the side of the frypan.
  2. Add the pork medallion and cook for 4 minutes. Move the apple to the top of the pork then sprinkle with brown sugar and pecans. Cover and cook to 4 to 8 minutes.
  3. When the pork is cooked through serve with juices and seasonal vegetables or salad.
