Salmon with Miso and Wasabi Sauce

This is so easy to make but the exotic miso and wasabi flavours give it a gourmet feel that will impress at your next dinner party.

Serves: 4 

  • 2 tablespoons rice wine vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon wasabi
  • 2 tablespoons white miso
  • 1/2 cup finely diced cucumber
  • 1kg salmon, cut into 4 to 6 equal fillets
  • 1 tablespoon olive oil
  • salt and pepper, to taste

  1. Make the sauce first to allow the flavours to combine. Whist together the vinegar, oil, wasabi and miso then stir in the cucumber.
  2. Preheat the oven to 135 degrees C.
  3. Rub both sides of the salmon with the oil then lightly sprinkle with salt and pepper.
  4. Place the salmon skin side down on a foil lined baking tray.
  5. Roast for about 20 minutes until flaky and just cooked through.
  6. Transfer to serving plates and drizzle with the sauce. Serve straight away.
