Sweet Bourbon Glazed Ham

    Everyone has to try making a Christmas ham once in their life, this is the recipe I tried and it was that good I am sharing it.

    Serves: 8 

    • 1 bone in ham about 4 to 5kg
    • 30 cloves or as required
    • 1 1/2 cups brown sugar
    • 1 1/2 tablespoons dry mustard
    • 1/3 cup (75ml) bourbon
    • 3 cups (750ml) apple cider or apple juice

    1. Remove the ham from the fridge about 2 hours before you want to cook it.
    2. Trim the excess fat from the ham leaving a 1/2cm layer only. Take a sharp knife and score the ham about 1cm deep and 5cms apart creating diamonds.
    3. Stick a clove into the centre of each diamond.
    4. In a small bowl add the sugar, mustard and bourbon then mix into a paste.
    5. Rub the paste over the whole ham then lay the ham fat side down in the baking tray. Cover with plastic wrap and leave for 30 minutes.
    6. Preheat the oven to 180 degrees C. Place the oven rack in the bottom third of the oven.
    7. Pour the apple juice into the baking tray so it is about 1cm deep.
    8. Bake the ham uncovered for 2 hours basting occasionally with fresh apple cider to maintain a juice depth of 1cm.
    9. When cooked transfer to a carving board and let rest for 20 minutes before carving.
