I found a recipe for Spotted Dick and it was full of references to lard and suet. This is my modern version. I am not sure how it compares to the old version but we like it, even for an alternative to the time consuming Christmas pudding.

Serves: 6 

  • 3/4 cup self-raising flour
  • 60g fresh breadcrumbs
  • 1/4 cup sugar
  • 1 pinch salt, to taste
  • 1/2 teaspoon mixed spice
  • 1/2 cup sultanas
  • 1/2 cup currants
  • 90g butter
  • 1/2 cup milk

Preparation:15min  ›  Cook:2hours  ›  Ready in:2hours15min 

  1. Add all the dry ingredients, dried fruit and butter into a bowl then mix together well.
  2. Add the milk and combine to form a soft dough.
  3. Place the mixture into a buttered pudding bowl of about 1 litre capacity then cover with foil.
  4. Bring a large saucepan of water to the boil then place a saucer in upside down to keep the pudding bowl off the bottom.
  5. Lower the pudding in and leave it to boil for 2 hours adding additional water as it evaporates.
  6. When cooked invert the pudding onto a plate and serve with custard.
