Melba Toast Cottage Cheese Cheesecake

This delicious cheesecake is made with cottage cheese, butter, cinnamon and makes a great dessert for Shavuot. The base is made of Melba toast crumbs. Delicious.

Serves: 9 

  • 110g Melba toast or rusks
  • 1/2 cup (100g) white sugar
  • 2 teaspoons ground cinnamon
  • 130g butter, melted
  • 3 1/4 cups (470g) dry small curd cottage cheese
  • 1 cup (200g) white sugar
  • 4 eggs
  • 4 tablespoons plain flour
  • 1 pinch salt
  • 1 cup (250ml) thickened cream
  • 1 teaspoon vanilla essence

  1. Preheat oven to 180 degrees C. Crush Melba toast into crumbs. In a medium bowl, combine crumbs, 1/2 cup sugar, cinnamon and melted butter. Mix well and press into the bottom and sides of a 22cm springform tin.
  2. In a large bowl, cream cottage cheese and 1 1/4 cup sugar until smooth. Beat in eggs one at a time. Beat in the flour and salt. Mix in cream and vanilla.
  3. Pour batter into base and bake in preheated oven for 1 hour. Cool completely before removing from tin.
