    This recipe can be used in so many ways, as a dip with biscuits and crackers at your next BBQ, or as an entree drizzled over your favourite salad ingredients.

    Serves: 4 

    • 2 tablespoons (30ml) olive oil
    • 2 zucchini, grated
    • 2 cups (475ml) plain yoghurt
    • 2 tablespoons (15g) walnuts, chopped
    • salt and pepper to taste

    1. Heat the oil in a frypan over high heat. Cook and stir the grated zucchini for 3 minutes, stirring constantly. Remove from heat and let cool.
    2. Mix the zucchini with the yoghurt and walnuts, and season with salt and pepper.
